Claire House Recipe: Butterfly Hospice Shortbread

There’s no doubt that shortbread is a firm favourite at Claire House. For the parents we support, there’s something special about taking a quiet moment to themselves with a cuppa and a slice of our buttery hospice shortbread. Lovingly baked in the hospice kitchen, the shortbread is legendary with families and staff alike — and even the children and young people love getting involved in making it. These simple biscuits bring a little pause and pleasure to the day. Here, we share the easy steps to making these delicious homemade treats, so you can enjoy a little taste of Claire House at home too.
Ingredients:
- 255g Plain Flour
- 170g Lurpak Spreadable
- 85g Caster Sugar
How to make it:
- Preheat oven to 150 degrees Celsius.
- Put butter, flour and sugar in the mixing bowl and mix until the mixture looks like breadcrumbs.
- Then use hands to squeeze mixture together so that the mixture looks like a dough (be careful, this might get messy).
- Roll out the dough with a rolling pin on a lightly floured surface and cut shapes using your chosen cutter.
- Place on a baking tray and leave it in oven for 20 minutes or until they turn golden brown.
- Leave the biscuits to cool and enjoy! You could even decorate them with your favourite toppings.
